Sep. 7th, 2008 01:28 pmI can't resist couscous. I can't. I can eat it hot or cold, day or night, with or without other foods.
Usually, I sauté onions and garlic in olive oil, add a can of diced tomatoes and simmer until the juice is reduced and add to the couscous. Occasionally, I mix in sun dried tomatoes instead of the canned. Once in a while, I add garlic shrimp to the mix; sometimes I have it as a side with roasted chicken. Today I used up some leftover carrots and celery. YUM!
